When my VST Instrument says that I can have a choice of 32 note polyphony (right down to mono/1 voice), does that mean the number of voices used to create the patch (like the unison mode on the virus) or does it mean that the VST instrument can deal with up to 32 incoming midi notes at a time? I’m confused.

It means that the VSTi can play 32 notes at once. Kind of. if you have a 4-note chord with a long release, you will wind up with 8 notes in use at one time when the release of one chord ovelaps the attack of the next.
