I've got a Midi Interface 2x2 (USB). And, 2 keyboards and a couple of rackmount synths.

Is it possible to hook up these 2 keyboards into Cubase and then use Cubase to play TWO rackmount synths at the same time (because i have 2 hands - really!)?

Yes, turn on Multirecord and a new column will appear. Make sure that both channels are record enabled.
